Wages: $26.50- $27.50 per hour for 30-40 hours per week

Job duties

  • Prepare and cook specialized, authentic North Indian pure vegetarian dishes (e.g., Paneer Tikka Masala, Dal Makhani, Chole Bhature) and traditional Indian sweets (Mithai) such as Gulab Jamun, Rasmalai, Jalebi, and Barfi, utilizing traditional recipes and specialized equipment like the Tandoor (clay oven).
  • Ensure consistent quality, authentic taste, and proper texture of complex Indian curries, street foods (Chaats), and delicate milk-based sweets by strictly following Rajdhani’s proprietary recipes and traditional spice-blending (Tadka) techniques.
  • Train and mentor junior kitchen staff and helpers in the intricate preparation methods of ethnic Indian cuisine, including dough-kneading for flatbreads (Naan, Parathas, Bhatura), proper spice tempering, and the delicate milk-reduction processes for making fresh Indian sweets.
  • Monitor and enforce strict food safety and sanitation practices, with a specific focus on the safe handling, temperature control, and storage of dairy-heavy Indian sweets (Khoya, Paneer) and vegetarian gravies to prevent spoilage and ensure compliance with health regulations.
  • Supervise and coordinate the daily workflow of the kitchen line particularly during high-volume periods such as Diwali, weddings, and weekend catering events.
  • Inspect specialized ethnic cooking equipment, including Tandoor ovens, large woks (Kadhais) for deep-frying Jalebis and Samosas, and sweet-making workstations, ensuring they are well-maintained, safe, and meet operational standards.
  • Monitor inventory of essential ethnic ingredients such as specific grades of basmati rice, chickpea flour (besan), ghee, paneer, raw whole spices, and dairy products required for sweet making and submit requisition orders to prevent shortages.
  • Inspect deliveries of raw materials, carefully evaluating fresh produce, dairy, and imported dry spices for freshness, quality, and correct quantities to ensure they meet the strict standards required for a pure vegetarian menu.
  • Determine the traditional plating and presentation of regional multi-item Thalis and street food (Chaat), and create visually appealing, decorative displays for the mithai (sweets) showcase and bulk catering orders to attract customers.
  • Work collaboratively with team to ensure all components of complex orders, such as large festive sweet boxes or dine-in Thalis, are prepared, garnished, and served synchronously.

Education: Completion of Secondary School is an asset.

Work Experience: 1-2 years of experience of commercial cooking required
